How to Make Sheer Khurma – Step by Step

Start by heating ghee in a pan over medium heat. As the ghee melts, toss in the chopped nuts, raisins, and dates. Let them roast for a minute or two until they turn slightly golden and release a wonderful aroma. You’ll also notice the raisins becoming plump, which is when you take everything out and set it aside.

In the same pan, add the broken vermicelli and stir well. Cook for about three minutes until it turns a light golden brown color. If you’re using mawa (khoya), now is the time to add it. Let it cook for a minute to enhance the richness.

Now, pour in the milk and stir everything together. Turn the heat to medium-high and wait for the milk to boil while stirring occasionally. This helps prevent the vermicelli from sticking to the pan. Once the milk starts boiling, reduce the heat and let it simmer for about eight minutes. You’ll notice the milk reducing slightly and turning thick and creamy.

It’s time to add some sweetness! Stir in the sugar or jaggery and mix well. Then, bring back the roasted nuts and raisins into the pan and give it a good mix. Now, for the final touch, add rose water and cardamom powder, which will enhance the flavor beautifully. Let everything simmer for another 2-3 minutes before turning off the heat.

You can serve Sheer Khurma warm or chilled, depending on your preference. If you love a thicker, creamier texture, let it cool in the refrigerator before serving. Garnish with a few extra nuts on top, and your festive dessert is ready to be enjoyed!
