1 teaspoon garam masala

2 dried red chilies
2 bay leaves
1 tablespoon oil

Instructions

Prep the Mushrooms: Wash the mushrooms thoroughly and remove the stems. Slice them into medium-sized pieces. Tempering: Heat oil in a pan over medium heat. Add cumin seeds, bay leaves, and dried red chilies. Let them sizzle until fragrant.
Heat Onions: Sauté the chopped onions until they turn translucent and golden brown.

Spice Blend

Add all the ground spices- coriander, black pepper, cumin, chaat masala, garam masala, and chicken masala, if using- sauté for a minute until fragrant. Tomato Base: Add the chopped tomatoes. Saute until they become soft and release their juices. Keep stirring to avoid sticking. Cook the Mushrooms: Place the sliced mushrooms in the pan and cook, stirring occasionally, for 5-7 minutes or until they soften slightly.

Simmer and Serve

Pour 1/2 cup of water (or to your liking) into the pan. Cover and let it simmer for 10-15 minutes or until the mushrooms are tender and the sauce has thickened. Garnish: Stir in the chopped coriander leaves. Serve Hot: Serve the Mushroom Masala hot with rice, roti, naan or any other accompaniment of preference.

Tips and Variations

To intensify the flavor, mix in a tablespoon of cashew paste or cream into the mushrooms while simmering. To intensify aroma, add a pinch of dried fenugreek leaves (methi) along with the other spices in the masala.
