2-3 Onions, finely chopped
2 Tomatoes, finely chopped
2 teaspoons Garam Masala powder
1 teaspoon Chicken Masala powder
1 teaspoon Coriander powder
1 teaspoon Turmeric powder
1 teaspoon Chili powder
1 teaspoon Cumin powder
1/2 cup Yogurt
Juice of 1/2 Lemon
2 Bay leaves
2 Dried red chilies
2 tablespoons Ginger-garlic paste
Salt to taste
1/2 cup Oil
Fresh Coriander leaves, finely chopped
Let’s Get Cooking
Marinate the Chicken: In a bowl, mix together the chicken, 1/2 teaspoon turmeric, 1/2 teaspoon red chili powder, juice of 1/2 lemon, 5-6 tablespoons yogurt, and 1/2 teaspoon salt. Mix well and marinate for at least 30 minutes or longer for deeper flavor. Spice Up the Base: Heat 1/2 cup oil in a pan or pot. Add 1/2 teaspoon cumin seeds, 2 bay leaves, and 2 dried red chilies. Let them sizzle and release their aroma.
Sauté the Aromatics
Add the finely chopped onions and cook till they turn translucent. Then, add the chopped tomatoes and ginger-garlic paste. Sauté till tomatoes soften and mixture becomes little dry. Add all the ground spices (garam masala, chicken masala, coriander, turmeric, and chili powder) to the pan. Cook for 2-3 minutes, stirring continuously, until the spices release their fragrance. Add the marinated chicken to the pan and cook on medium heat for 5 minutes, stirring occasionally. Simmer to Perfection: Add 1/2 cup water to the pan. Cover and cook for 10-15 minutes, or until the chicken is cooked through and the gravy has thickened. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with steamed rice, roti, or naan.
Tips and Variations
Use bone-in chicken pieces for a richer flavor. Add a touch of cream or coconut milk towards the end for a creamy texture. Spice level is according to your preference. Add veggies like potatoes, peas, or bell peppers to the dish. Serve with raita or salad to balance your flavors. Enjoy this Chicken Masala recipe. Happy Cooking!
