Introduction

The mere mention of bitter gourd (karela) can make some people cringe. Its bitterness can be off-putting, but fear not! Stuffed Bitter Gourd is a delicious and flavorful recipe that will transform your perception of this often-dreaded vegetable. This dish is not only incredibly tasty but also surprisingly easy to prepare and perfect for those who are new to or hesitant about trying bitter gourd.

Preparing the Gourds

Begin by taking some fresh, firm bitter gourds. Wash them thoroughly and peel them using a knife. To reduce bitterness, sprinkle half a teaspoon of salt inside each gourd and let them sit for about 15 minutes. Take each gourd and cut them lengthwise but leave one side attached. This will give a pocket for the stuffing. Gently scoop out all the seeds from the inside.

Deep Frying the Gourds

Heat oil in a pan. Rub the prepared gourds with turmeric and salt. Fry them lightly golden and set aside.

Preparation of the Filling

When the gourds are cooled, heat oil in another pan. Temper the oil with cumin seeds and asafoetida, followed by the addition of chopped onions and tomatoes. Saute the mixture until onions turn translucent and tomatoes have softened. Now add ginger-garlic paste and cook till raw smell disappears. Add all the ground spices mustard powder, dry mango powder, fennel powder and 2-3 tablespoons of water. Cook and stir continuously till spices get well mixed and the mixture is fragrant. Take the pan off the flame and let the stuffing cool down.

Stuffing and Cooking

Now, when the stuffing has cooled, fill each gourd with the aromatic mixture very carefully. You can cook the stuffed gourds in a few ways: Pan-frying: Heat a little oil in a pan and gently fry the stuffed gourds until they are heated through and the stuffing is slightly browned. Steaming: Place the stuffed gourds in a steamer and steam for 10-15 minutes, or until tender. Baking: Stuff the gourds and arrange them in a baking dish. Bake at 350°F (175°C) for 15-20 minutes, or until the gourds are tender. Serving Garnish the cooked stuffed gourds with chopped cilantro and serve hot with steamed rice, roti, or paratha.

Tips and Variations

Add a pinch of garam masala to the stuffing for added flavor. Add some chopped green chilies or grated coconut in the stuffing for some heat or richness. Substitute dry mango powder or ‘amchur’ by lemon juice to make this vegetarian. Left over, stuffed gourds may be stored in the refrigerator for days and served as an instant meal.
