Ingredients

250 grams Mushrooms
1/2 bowl Finely chopped Onions
1/2 bowl Finely chopped Tomatoes
1/2 teaspoon Coriander Powder
1/2 teaspoon Black Pepper Powder
1/2 teaspoon Cumin Powder
1/2 teaspoon Chaat Masala
Sabji Masala (to taste)
1 tablespoon Chicken Masala
2 Dried Red Chillies
2 Bay Leaves
1 cup Oil
Salt to taste
Chopped Coriander Leaves

Instructions

Preparation of Mushrooms: Rinse the mushrooms well and dry them with a clean cloth. Remove the bottom stalks. Tempering: Heat 2-3 tablespoons of oil in a pan over low heat. Add cumin seeds, bay leaves, and dried red chilies. Let them sizzle and release their aroma. Add the finely chopped onions and ginger-garlic paste to the pan. Sauté until the onions turn translucent and golden brown. Spice Infusion: Add all the ground spices (coriander powder, black pepper powder, cumin powder, chaat masala, sabji masala, and chicken masala) to the pan. Stir well and cook for a few minutes until the raw aroma of the spices disappears.

Add the finely chopped tomatoes to the pan, let them get soft and release their juices, and keep stirring lest they stick. Add the Mushrooms: Include the pre-prepared mushrooms to the pan. Mix well with the masala in the pan. Sauté them for 5-10 minutes so that they soak the flavors within themselves. Simmer and Serve: Add 1/2 cup to 1 cup of water to the pan, cover and simmer for 10 minutes or until the mushrooms are cooked. Garnish with fresh coriander leaves.

Serve it along with your choice of accompaniments

Tips And Variations

Add less or more amount of water depending on your requirement. Add a spoonful of cream or coconut milk towards the end of cooking for a creamier version.
