Chole is one of the staple items in Indian cuisine. This is rich in protein, fiber, and all essential vitamins and minerals. Ingredients
500 grams of chickpeas soaked overnight
4 large onions, finely chopped
2 tomatoes, finely chopped
2 tablespoons ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon black pepper powder
1 tablespoon garam masala powder
4 tablespoons mustard oil
2 bay leaves
2-3 dried red chilies
1 tablespoon chole masala
Salt to taste
Method
Spice Tempering: Heat mustard oil in a pressure cooker. Add cumin seeds, red chilies, and bay leaves. Once the spices start sizzling, add the chopped onions and fry until they are golden brown. Masala Infusion: Add ginger-garlic paste and all the dry spices (turmeric, cumin, red chili, coriander, black pepper). Sauté for 5 minutes until the raw aroma of the spices disappears.
Tomato Fusion
Add the chopped tomatoes and cook until they soften and release their juices. Stir continuously to prevent sticking. Chole Integration: Put the soaked chickpeas in the cooker. Add little water (around 4 tablespoons), making sure that the chickpeas are just covered by it. Pressure Cooking: Add chole masala and salt. Close the cooker and pressure cook for 6-7 whistles. Serving: When the pressure drops, slowly open the cooker. Your delicious homemade Chole is ready to serve! Relish it hot with puri, parathas, rice, or your favourite Indian bread.
Tips & Variations
Add a pinch of asafoetida (hing) while tempering for extra flavor. Add lemon juice to the dish right before serving for a tartier taste.
Add red chili powder for a spicier version. You could also add chopped green chilies or slit green chilies along with the chickpeas in the cooker.
