1/4 cup Roasted peanuts
1 tablespoon Lime juice
2 tablespoons Cooking oil
1 tablespoon Mustard seeds
2 tablespoons Chopped coriander

Preparation of Poha

Rinse the Poha with water thoroughly and drain it well. Leave it for 10 minutes so that it softens. Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Sauté the Veggies: Add chopped onions, green chilies, and curry leaves to the pan. Sauté till the onions are translucent. Spice Things Up:  Add turmeric powder, red chili powder, and salt to the pan. Mix well and cook for about a minute.

Combine and Cook

Add the softened Poha to the pan and mix gently with the spices. Cover and cook on low heat for 5 minutes, stirring occasionally to prevent burning. The Finishing Touches: Add roasted peanuts and lime juice. Mix well. Garnish and Serve: Garnish with chopped coriander and serve hot.

Tips for Poha Perfection
