Ingredients
1 cup rice flour
½ cup gram dal (split yellow lentils)
½ cup urad dal (black gram lentils)
2 onions, finely chopped
2 tomatoes, finely chopped
2-3 green chilies, finely chopped
4 cloves garlic, minced
1-inch piece ginger, minced
½ teaspoon black pepper powder
½ teaspoon cumin powder
2-3 teaspoons ghee
2 pinches asafoetida
½ teaspoon mustard seeds
Salt to taste
Instructions
Prepare the Dal: Wash the gram dal and urad dal thoroughly and soak them in water for 5-6 hours. Cook the Rice Flour: In a vessel, bring one cup of water to a boil. Add two teaspoons of ghee and one teaspoon of salt. Gradually add the rice flour, stirring constantly to prevent lumps. Let it cook until the flour is fully cooked and has a slightly doughy consistency. Allow it to cool slightly.
Prepare the Filling
The soaked gram dal and the urad dal are to be coarsely ground in a grinder. Heat two teaspoons of ghee, add asafoetida, and sauté onions, ginger, garlic, and green chilies until they are softened. Sauté the ground lentils and spices on low heat until it is very fragrant and slightly dry. Let it cool altogether.
Shape the Fares
When the rice flour mixture has cooled enough to be handled, knead it lightly into a soft dough. Add a little ghee to your hands so that it doesn’t stick to them. Take small portions of the dough and shape them into small balls. Make a small indentation in each ball and fill it with a spoonful of the lentil filling. Close the ball tightly and shape it into your desired form, like round or oval, etc.
Cook the Fares: Heat a pan with a little ghee. Gently place the shaped fares in the pan and cook them on medium heat until golden brown on all sides. Serve hot with chutney or your favorite dipping sauce.
