Ingredients

200 grams of peanuts
2 inches of tamarind
Juice of half a lemon
Half a teaspoon of mustard seeds
Two whole dried red chillies
10 to 15 curry leaves
Two tablespoons of mustard oil
Salt to taste

Let’s Get Cooking

Roast the Peanuts: Begin by roasting the peanuts in a dry pan over low heat. Roast for 3-4 minutes, stirring occasionally, until fragrant and slightly golden. Allow them to cool completely before proceeding. Grind the Peanuts: Once cooled, add the roasted peanuts to a blender or grinder along with a few garlic cloves and a small piece of ginger. Grind into a smooth paste. Prepare Tamarind Water: Soak the tamarind in warm water for about 15 minutes. Squeeze out the pulp and discard the seeds. Tempering: Heat mustard oil in a small pan. Add mustard seeds and let them crackle. Then, add the dried red chillies and curry leaves, letting them sizzle briefly.
