- Prepare the Dosa Batter
Begin by washing the rice and urad dal thoroughly. Soak them together in water for about 6-8 hours or overnight. Add fenugreek seeds to the soaking mixture. After soaking, grind the rice, dal, and fenugreek seeds into a smooth batter, adding enough water to achieve a pancake-like consistency. Once ground, let the batter ferment for 8-10 hours in a warm place, until it rises and becomes slightly sour. Add salt to taste.
- Prepare the Potato Filling
Heat oil in a pan and add mustard seeds. Once they splutter, add the chopped onions, green chilies, and curry leaves. Sauté until the onions turn soft and golden. Add turmeric powder, asafoetida, and salt. Now, add the boiled and mashed potatoes, and mix everything well. Cook for a few minutes until the flavors blend together. Garnish with chopped coriander leaves and set aside.

- Making the Dosa
Heat a flat, non-stick tawa (griddle) on medium heat. Once hot, pour a ladle of dosa batter onto the center of the tawa. Using the back of the ladle, spread the batter in a circular motion to form a thin, even layer. Drizzle a little oil around the edges of the dosa and cook for 2-3 minutes until the edges start to turn crispy and golden brown.
